The infrared signal works like you TV remote, where the signal is send through a optical signal which is received by the wireless headphones and then converted to sound.
Bluetooth signal uses a lower frequency that the radio signal, further it is the same as a radio signal, the signal is send, then received and then converted into sound waves coming out of the wireless headphones.
